Upscale Las Vegas steakhouse Carversteak is making its NYC debut
A buzzy Las Vegas steakhouse is making its New York debut, landing right in the Theater District starting March 20.
Carversteak, the modern steakhouse that built a following on the Las Vegas Strip, will open its first location outside Nevada at 305 W. 48th Street in midtown Manhattan next week. The restaurant comes from Carver Road Hospitality and expands the group’s growing footprint in the city, which already includes venues like Rosevale Cocktail Room and Starchild Rooftop.
The 124-seat restaurant was designed by Rockwell Group, the architecture and design firm led by David Rockwell, whose portfolio includes New York favorites like COQODAQ and Din Tai Fung. Inside, the space channels the old-school glamour of classic Manhattan steakhouses. Diners enter through a golden velvet curtain into a dining room filled with wood paneling, leather banquettes, brass accents and black-and-white photos of Broadway and backstage life.
The kitchen is led by executive chef Daniel Ontiveros, whose resumé includes stints at Bouchon Bistro and the three-Michelin-starred Joël Robuchon at The Mansion. Here, Ontiveros anchors the menu with a serious steak program alongside playful takes on steakhouse classics.
Small plates include short rib croquettes with shallot marmalade and gochujang aioli, Wagyu cheesesteak bites served on buttered Parker House rolls and caviar-topped hash brown “popsicles.” From the raw bar, you’ll find dishes like hamachi with Thai chiles and yuzu as well as the Golden Tower seafood platter, a dramatic tableside display featuring oysters, shrimp, clams, mussels, crab, lobster and ceviche.
The steak lineup includes prime cuts like ribeye and filet, along with luxury options like a 40-ounce tomahawk for two and American Wagyu rib cap from Snake River Farms. Diners can add classic steakhouse sauces such as béarnaise or bordelaise, or upgrades like roasted bone marrow and jumbo lump crab.
Not in a steak mood? There’s also a Wagyu steak burger, rigatoni alla vodka and a French onion short rib dish topped with Gruyère.
The beverage program, overseen by hospitality veteran Francesco Lafranconi, leans hard into martini culture. A “Dirty Martini Experience” lets guests customize their drink while freezer-door cocktails include savory spins like the Martini Aioli, made with Caesar-washed vodka and Parmesan.
There’s even a tableside Old Fashioned cart featuring custom ice stamped with the restaurant’s logo.
Carversteak debuted in 2021 at Resorts World Las Vegas and quickly became one of the Strip’s most talked-about steakhouses. Now, with a Midtown location steps from Broadway, the team is betting the concept’s mix of steakhouse tradition and theatrical flair will resonate with New York’s own dinner-and-a-show crowd.
