A new West Village market has croissants, rotisserie chicken and dinner for your dog

The West Village has a new answer to “What’s for dinner?”—and, unusually, it has one for your dog, too.

H. Valley opens today, September 23, on Hudson Street. The market comes from chef Austin Johnson, formerly of One White Street and Rigor Hill Market, and restaurateur Eytan Sugarman, whose Hudson Street Hospitality group is behind White Horse Tavern. It’s a mix of café and grocery store (and the perfect place to pick up dinner when cooking has lost its appeal.)

Start in the morning with coffee and a twice-baked pistachio croissant or order Johnson’s bacon, egg and cheese on a warm biscuit. The bakery will also make baguettes, sourdough, brioche, and seasonal focaccia. On weekends, Johnson plans to make rolled omelets to order at a bar modeled on one he ran at Rigor Hill.

Lunch includes sandwiches ranging from roast beef with horseradish aioli and pickles to pork shoulder with broccoli rabe, Calabrian chile and date purée. There’s also a grilled chicken sandwich inspired by a Caesar salad and tuna salad dressed with green goddess on multigrain bread.

Later in the day, the prepared-food selection shifts toward rotisserie chicken, grilled fish, roasted potatoes and seasonal vegetables. Shoppers with more ambition can pick up produce from regional farms, ready-to-cook ribeye or salmon, housemade pasta sauces and frozen take-and-bake lasagna.

The shelves even extend to four-legged customers: H. Valley’s own dog-food line, Dion’s Diet, includes recipes made with Hudson Valley brook trout, chicken and Long Island duck. Human children also have a dedicated grab-and-go refrigerator, plus a corner with an aquarium, crayons and coloring books.

A Friday farmers market is planned from 8 am to 2 pm, with producers from the Hudson Valley. The team also has private dinners, chef collaborations and a broader dining program in mind for later this year. For now, H. Valley is open Wednesday through Sunday, 7 am to 8 pm, at 569 Hudson Street.
